Paleo Ginger Chews
MAKES: 20 COOKIES • PREP TIME: 15 MINUTES • COOK TIME: 15 MINUTES PASSIVE TIME: 40 MINUTES • DIFFICULTY: EASY
Gingerbread is always welcome around the holidays, and these paleo-friendly ginger chews are delicious and easy to make!
3/4 tsp ground Cinnamon 1/4 tsp ground Allspice 1/8 tsp ground Black Pepper 1/8 tsp ground Cloves
1/8 tsp ground Nutmeg 1/4 + 1/8 tsp Baking Soda 1/4 tsp Salt 1/3 cup Coconut Oil, soft 1/4 cup Coconut Nectar
11/2 cups Bob’s Red Mill® Paleo Baking Flour 1/3 cup Bob’s Red Mill® Organic Coconut Sugar 2 tsp ground Ginger
Instructions 1. Line two baking pans with parchment paper and set aside. 2. Mix together flour, sugar, spices, baking soda and salt. Add coconut oil and coconut nectar and mix until well combined. 3. Portion dough into pieces, about 1 tablespoon each; place on prepared baking pans and flatten slightly. Chill for at least 30 minutes; meanwhile preheat oven to 325°F. 4. Bake until golden around edges, about 15 minutes.
