MOLASSES COOKIES MAKES: 18 cookies PREP TIME: 15 minutes COOK TIME: 8–10 minutes
Ingredients • 2 cups Bob’s Red Mill® Organic Unbleached White All-Purpose Flour (or Bob’s Red Mill® Gluten Free 1-to-1 Baking Flour) • 2 tsp Baking Soda • ¼ tsp Salt • 1 tsp ground Cinnamon • 1 tsp ground Ginger
• ½ tsp ground Cloves • ¾ cup Butter, softened • 1 cup Brown Sugar • ¼ cup Molasses • Egg • ¼ cup Sparkling Sugar
Instructions 1. Preheat oven to 375°F and line baking sheets with parchment paper. 2. In a small bowl, mix flour, baking soda, salt and spices. 3. In a large bowl, mix butter, brown sugar and molasses until combined, then add egg. Add dry mixture and mix until combined. 4. Scoop cookies into 1-inch balls and roll the tops in sparkling sugar. Place 2 inches apart on prepared baking sheets and bake until edges are just set, 8–10 minutes. Let cool on baking sheets for 5 minutes, then remove to a cooling rack.

Repeat with your remaining cookies and go spread some holiday cheer!
HOLIDAY TEA COOKIES
MAKES: 40 cookies PREP TIME: 25 minutes COOK TIME: 10–12 minutes PASSIVE TIME: 2 hours or overnight
• 2 cups Bob’s Red Mill® Gluten Free 1-to-1 Baking Flour • ¾ cup Bob’s Red Mill® Almond Flour • 1 tsp Salt
Ingredients • 1 cup Butter, softened • 2½ cups Powdered Sugar, divided • 1 tsp Vanilla Extract
Instructions 1. Line a baking sheet with parchment paper and set aside. 2. In a bowl, combine butter, ½ cup powdered sugar and vanilla extract until very creamy, about 4 minutes. 3. Meanwhile, mix flours and salt in a small bowl. 4. Add flour mixture to the butter mixture and mix until just combined.
5. Scoop cookie dough into 1-inch balls and place on prepared baking sheet. Wrap baking sheet in plastic wrap and refrigerate cookie dough for at least 2 hours or overnight. 6. When ready to bake, preheat oven to 375°F and line additional baking sheets with parchment paper. Place remaining 2 cups of powdered sugar in a large bowl. 7. Toss cookies in powdered sugar to coat and place on prepared baking sheets about 1 inch apart. Bake until the bottoms are lightly browned, 10–12 minutes. 8. Immediately and carefully roll hot cookies in powdered sugar and transfer to a rack to cool completely. 9. Toss cookies a third time in powdered sugar once completely cooled.

Line a cardboard gift box with parchment paper. 2. Top with a layer of cookies. (Pro Tip: if you’re worried about your goodies sliding around during transport, place them in mini or regular paper cupcake wrappers, depending on the size of your treats.) 3. Cover with another layer of parchment paper. Continue stacking if you wish, layering with parchment paper, but we recommend no more than two layers of treats. 4. Close the box securely and tie with twine or ribbon, sliding on a gift tag. 5. Make it merry: take a walk outside and let nature be your decorator! Things like pinecones, rosemary and camellia leaves or other year-round greenery are a wonderful way to personalize your gifts. 6. Bring treats and good tidings to your next holiday party—or next-door neighbor!
CITRUS POUND CAKE MAKES: Two loaves PREP TIME: 20 minutes COOK TIME: 60 minutes
Ingredients • 3 cups Bob’s Red Mill® Organic Unbleached White All-Purpose Flour (or Bob’s Red Mill® Gluten Free 1-to-1 Baking Flour) • ½ tsp Baking Powder • ½ tsp Baking Soda • 1 tsp Sea Salt • 1 cup Butter, room temperature
• ¼ cup fresh squeezed Grapefruit Juice • ½ cup fresh squeezed Orange Juice • 1 tsp Vanilla Extract Optional Glaze • 1 ½ cups Powdered Sugar • 1–2 Tbsp fresh squeezed Orange Juice
• 2 cups Granulated Sugar • 4 Eggs, room temperature • 2 Tbsp Lemon Zest • 2 Tbsp Grapefruit Zest • 2 Tbsp Lime Zest • 2 Tbsp Orange Zest • ¾ cup Mascarpone Cheese, room temperature
Instructions 1. Preheat oven to 350°F. Grease two standard loaf pans and line with parchment paper. 2. Sift together flour, baking powder, baking soda and salt. Set aside. 3. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and granulated sugar until light and fluffy (4–5 minutes). Add eggs one at a time, incorporating after each addition, then add zests and mascarpone cheese. 4. Alternate adding dry ingredients with juice and vanilla in three rounds, beginning and ending with the dry ingredients. Scrape down the sides of the bowl.
5. Divide batter evenly between prepared pans, smooth the tops and bake for 50–60 minutes, or until a cake tester comes out clean. 6. Let cool in pan for about 10 minutes, then transfer to a rack to finish cooling. 7. Make the glaze: sift powdered sugar into a bowl, then add 1–2 tablespoons fresh squeezed juice and whisk until smooth. Drizzle over the cake after it cools.
