Steel Cut Oats
Do You KnowYour Oats? While all of our oats begin as whole grain kernels known as groats, the end result can look quite different. We take these groats and create varieties for every palate and recipe, while retaining all the fiber and nutrition of the whole grain. Many of our products are also available in organic and gluten free options.
Bob’s Red Mill’s award-winning Steel Cut Oats are made with whole grain oat groats that have been cut into small pieces on a steel burr mill. A good source of fiber that offers up to 5 grams of protein per serving, steel cut oatmeal makes a delightfully full- bodied hot cereal that is sure to satisfy. Old Fashioned Rolled Oats

Homemade Oat Milk Make delicious dairy-free milk at home with just two simple ingredients: water and rolled oats! This smooth, creamy milk is ideal for smoothies, cereal and in your morning coffee. Double straining ensures a smooth texture, but this recipe can also be made by straining through a fine mesh sieve or cheesecloth alone. NOTES • To make a sweeter milk add in maple syrup and a pinch of salt for balance. • To make a creamier milk, reduce water to 3 ½ cups. • Take care not to over blend, as this will result in a more viscous/starchy liquid. INGREDIENTS 4 cups filtered Water 1 cup Bob’s Red Mill®️ Gluten Free Old Fashioned Rolled Oats Optional ¼ tsp Kosher Salt 2 Tbsp Maple Syrup INSTRUCTIONS • Combine water and oats in a high-powered blender. • Blend on high for 30–45 seconds. • Pour through fine mesh sieve lined with cheesecloth.
• Store in a sealed container in the refrigerator for 4–5 days.

Oatmeal Pancakes with Flax and Chia These hearty pancakes are made with rolled oats, chia and flaxseeds, and sweetened with a touch of maple syrup. Packed with nutrient-dense ingredients, these pancakes will keep you sated and fueled with fiber, protein and omega-3 fatty acids! NOTES • The batter will thicken as it sits. If it becomes too thick to portion as you cook, add 1 tablespoon of water to the batter and re-blend. INGREDIENTS
3 cups Bob’s Red Mill®️ Gluten Free Organic Old Fashioned Rolled Oats , divided 2 tsp Baking Powder 1 tsp Baking Soda 1 tsp Kosher Salt 2 Tbsp Bob’s Red Mill®️ Organic Chia Seeds
2 Tbsp Bob’s Red Mill®️ Organic Golden Flaxseed Meal ¼ cup Maple Syrup 1 Egg 1 tsp Vanilla Extract 1 ½ cups Milk 2 Tbsp Butter, for skillet
INSTRUCTIONS • Preheat a griddle or nonstick pan to medium heat. • Blend 2 cups of rolled oats into flour in a high-powered blender or food processor, about 30 seconds. • Add baking powder, baking soda, salt, chia seeds and flaxseeds. • Pulse to combine. • Add remaining cup of rolled oats, maple syrup, egg, vanilla extract and milk. • Blend for 30–45 seconds, or until combined and no dry spots remain. • Brush preheated griddle with butter and portion batter using a ¼ -cup measuring cup. • Cook until the edges begin to set, 3–4 minutes. • Flip and continue to cook on the second side 2–3 minutes more. • Serve warm or hold in a 200°F oven for up to 15 minutes.

Baked Pear Oatmeal
Filled with seasonal pears and warm spices, this baked oatmeal is an easy yet upscale way to enjoy oats in the morning.
INGREDIENTS 2 cups Bob’s Red Mill®️ Old Fashioned Rolled Oats 1 tsp Baking Powder ½ tsp Salt ½ tsp Cinnamon ¼ tsp Ginger ¼ tsp Nutmeg
3 cups Water or Milk, Pear Juice, or Apple Juice 2 Eggs ½ cup Brown Sugar ¼ cup Butter, melted and cooled 1 tsp Vanilla Extract 2 cups chopped fresh Pears, about 2 whole
INSTRUCTIONS • Preheat oven to 350°F. Butter a 9 x 9-inch baking dish and set aside. • In a small bowl, combine rolled oats, baking powder, salt and spices. • Set aside. • In a large bowl, whisk together water (or milk or juice), eggs, brown sugar, melted and cooled butter, and vanilla extract. • Add oat mixture to the wet ingredients and mix to combine. • Fold in chopped pears. • Transfer mixture to the prepared baking dish and bake until set, about 40–50 minutes. • Let cool about 5 minutes before serving.

Healthy Breakfast Cookies Delightfully nutty with a touch of chocolate, these gluten free and vegan cookies are made from wholesome ingredients like oats, chia, flax and cooked sweet potato to keep you fueled from breakfast to after-dinner snack time!
INGREDIENTS 1 ½ cups Bob’s Red Mill®️ Gluten Free Old Fashioned Rolled Oats or Quick Cooking Gluten Free Rolled Oats 2 Tbsp Bob’s Red Mill®️ Organic Chia Seed 2 Tbsp Bob’s Red Mill®️ Organic Golden Flaxseeds 1 tsp Baking Powder
½ cup cooked and mashed Sweet Potato ¼ cup Maple Syrup ¼ cup Peanut Butter 1 tsp Vanilla Extract ¼ cup Vegan Chocolate Chips (like Enjoy Life brand)
INSTRUCTIONS • Preheat oven to 350°F. • In the work bowl of a food processor, pulse together oats, chia, flaxseeds and baking powder until it resembles large, loose crumbles. • Add sweet potato, maple syrup, peanut butter, vanilla extract and chocolate chips. • Pulse again until combined, scraping down sides as needed. • Chocolate chips should break down into small pieces. • Divide into 12 balls and bake for 15 minutes. • Let cool for 10 minutes on baking sheet and enjoy!

Cheesy Oatmeal This bowl of savory oatmeal is comfort food at its finest: creamy, cheesy and incredibly delicious! Grab a bag of cheese powder and you are in for a treat. We topped this bowl of goodness with caramelized onion and bacon, but sautéed mushrooms and spinach would be equally delicious. NOTES • This recipe is microwaved, but feel free to cook them on the stovetop if you prefer—simply cook as you would plain oatmeal. INGREDIENTS 1 cup Bob’s Red Mill®️ Gluten Free Old Fashioned Rolled Oats 2 cups Water Salt and Pepper to taste 2 Tbsp Powdered Cheese INSTRUCTIONS • Combine oatmeal, water, salt and pepper in a large bowl and microwave for 2 mintutes. • Stir in cheese powder and microwave for an additional minute. • Allow to rest for 3–5 minutes, then serve.

Skirlie
This vegetarian version of the traditional savory Scottish oat dish uses Steel Cut Oats to create a delicious side or main dish.
INGREDIENTS 1 Tbsp Butter
1 cup Bob’s Red Mill®️ Steel Cut Oats 2 cups Vegetable Broth Freshly ground Pepper to taste Salt to taste
2 medium Shallots, diced 2 cloves Garlic, chopped 1 tsp each: fresh Thyme, fresh Rosemary, fresh Sage, chopped
INSTRUCTIONS • Heat butter in a pan over medium heat. • Add shallots and garlic and sauté for 4–5 minutes, or until just translucent. • Next, add herbs and steel cut oats. • Stir frequently and continue to cook for 3–5 minutes, allowing herbs to become fragrant and oats to toast slightly. • Add vegetable broth and bring to a boil. • Cover and reduce heat to low; stirring regularly. • The oats will continue to thicken; cook for at least 20 minutes to reduce the liquid, and longer if desired. • Add freshly ground pepper and salt to taste and serve.

Enjoy savory oats with a spicy twist! This delicious grain bowl has Extra Thick Rolled Oats as a hearty base for mixed greens, beans, veggies and more.
INGREDIENTS ½ cup Bob’s Red Mill®️ Extra Thick Rolled Oats , cooked according to package directions Mixed Greens, Spinach or Lettuce; thinly sliced or chopped SUGGESTED TOPPINGS • Cooked Chicken or Steak; chopped or thinly sliced • Black Beans • Sautéed Peppers and Onions • Corn • Avocado or Guacamole • Sliced or Pickled Jalapeños • Pico • Fresh Cilantro • Lime • Sour Cream • Shredded Cheddar Cheese, Queso Fresco or Nutritional Yeast INSTRUCTIONS • Place cooked oatmeal in a closed container and refrigerate overnight. • The next day, remove the cooked oatmeal from the refrigerator. • To microwave, add 1 tablespoon water to the oatmeal in a microwave safe container. • Stir the mixture well. • Microwave 30–60 seconds depending on how hot you want to eat your grain bowl. • To reheat on the stove, place the oatmeal in a small saucepan, add 1 tablespoon of water to the oatmeal and stir well. • Heat the mixture on medium low for 1–3 minutes depending on out hot you want to eat your grain bowl. • To build your grain bowl, add mixed greens or lettuce to one side of the bowl. • Next, add cooked Extra Thick Rolled Oats to the other side of the bowl. • Gradually add your toppings of choice and enjoy. Gluten Free Oat Challah Rolls
These delicious gluten free rolls are delicious and so easy to make! Made with our Gluten Free Oat Flour, they have a wonderful texture you’ll love.
INGREDIENTS 1 ½ Tbsp Active Dry Yeast 1 ½ cups Warm Water 2 Tbsp Sugar
⅔ cup Oil 3 Eggs 4 cups Bob’s Red
½ cup Sugar 1 Tbsp Bob’s Red
Mill®️ Xanthan Gum
½ tsp Salt
Mill®️ Gluten Free Oat Flour
INSTRUCTIONS • Spray a muffin pan with nonstick spray.
• In a mixing bowl, mix yeast, water and sugar and let sit for five minutes. • Add the remaining ingredients and mix until combined, then cover and let sit for 30 minutes. • Preheat oven to 350°F. • Using a ¼ cup scoop, portion dough into prepared pan and bake for 30 minutes, until lightly browned. Makes 22 muffins .

Oatmeal Cookies These classic oatmeal cookies are incredibly delicious—and easy to make gluten free. Did you know that pulsing or chopping the oats will produce a cookie that stays fresh tasting longer? We recommend this step, but it is optional.
INGREDIENTS 1 ½ cups Bob’s Red Mill®️
½ cup Granulated Sugar 2 Eggs 1 tsp Vanilla Extract
Unbleached White All-Purpose Flour or Gluten Free 1-to-1 Flour 1 tsp Cinnamon 1 tsp Baking Soda ½ tsp Kosher Salt 1 ¼ cups Butter, room temperature 1 cup Brown Sugar
3 cups Bob’s Red Mill®️ Old Fashioned Rolled Oats or Gluten Free Old Fashioned Rolled Oats 1 cup Raisins or Chocolate Chips
INSTRUCTIONS • To pulse or chop the oats: place rolled oats in a blender or food processor fitted with a metal blade and pulse 3–5 times, until the oats are about one third the original size. • Oats may also be chopped by hand on a cutting board. • Preheat oven to 375°F and line two baking sheets with parchment paper. • In a medium bowl, combine flour, cinnamon, baking soda and salt; set aside. • In a large mixing bowl, beat butter, brown sugar and granulated sugar until smooth and creamy, 3–5 minutes. • Add eggs and vanilla extract and mix until smooth. • Add flour mixture and blend briefly, followed by the oats and raisins or chocolate chips. • Mix just until oats and raisins or chocolate chips are evenly distributed. • Portion dough onto prepared baking sheets, about 2 tablespoons per cookie, leaving about 2 inches between each cookie. • Bake until the edges have browned and the center is set, 9–12 minutes. • Let cool on the baking sheet for 10 minutes before removing to a wire rack to cool completely. • Store in an airtight container. Makes 60 cookies.

Peanut Butter & Jelly No-Bake Cookies
These no-bake cookies feature the nostalgic combination of peanut butter and jelly! Freeze dried raspberries and dried cranberries add that fruity flavor, while peanut butter and oats add protein and fiber.
INGREDIENTS 1 cup Bob’s Red Mill®️ Organic Coconut Sugar ¼ cup Butter ½ cup Powdered Freeze-Dried Raspberries ¼ cup Milk ¼ tsp Kosher Salt 1 cup Peanut Butter
3 cups Bob’s Red Mill®️ Old Fashioned Rolled Oats 1 tsp Vanilla Extract ¼ cup chopped, dried Cranberries Optional Melted Chocolate, for drizzling
INSTRUCTIONS • In a large saucepan, melt together coconut sugar, butter, milk, raspberries and salt. • Bring to a boil and cook for 1 minute. • Remove from heat and stir in remaining ingredients. • Use a spoon to drop cookies on either wax or parchment paper. • Refrigerate for 30 minutes to allow cookies to harden. • Drizzle with melted chocolate, optional.

Peanut Butter Oatmeal Dog Treats Everyone deserves a special treat now and again, especially our furry friends! Tony Shasteen brings us this simple recipe for nutritious dog treats made with peanut butter and our Quick Cooking Rolled Oats. You can either makes these in a silicone dog treat mold, or scoop them onto a baking sheet.
INGREDIENTS 1 cup Bob’s Red Mill®️ Quick Cooking Rolled Oats
⅓ cup Natural Peanut Butter
1 Banana, mashed 1 Egg, whisked
INSTRUCTIONS • Preheat oven to 350°F. Prepare a 20–30-piece silicone dog treat mold or line a baking sheet with parchment paper and set aside. • Combine all ingredients in a large bowl; mash and stir well. • Fill the dog treat mold with the mixture, or scoop into 1 tablespoon balls and place on prepared baking sheet. • Bake for 10–15 minutes, or until firm and slightly browned. • Allow to cool slightly, then remove treats to a wire rack to cool completely. Makes 12–24 treats .
