INGREDIENTS 1 ½ cups Water 4 oz Cream Cheese, soft 2 Tbsp Butter ½ tsp Kosher Salt ½ cup cold Milk 1 ⅓ cups Bob’s Red Mill ® Potato Flakes ½ cup Sour Cream 2 Tbsp minced Chives (optional) INSTRUCTIONS • Heat water to boiling, then add cream cheese, butter and salt. Whisk until smooth. • Remove from heat and add cold milk. • Add potato flakes and stir gently. Fluff with a fork; do not whip. • Let sit for 2–3 minutes, then fold in sour cream. Garnish with minced chives. VARIATIONS: • Cheddar Mashed Potatoes: Omit cream cheese; add 1 cup shredded cheddar cheese with potato flakes, then top with an additional ½ cup cheddar. • Herbed Mashed Potatoes: Omit cream cheese and sour cream; add 2 tablespoons minced fresh herbs with potato flakes. • Roasted Garlic Mashed Potatoes: Omit cream cheese and sour cream; add ¼ cup (about 1 head) roasted garlic with butter and salt.
